Aloo Tikki

The Aloo Tikki (aka The Indian Potato Fritter) is a very popular starter or snack in the Northern India state of Punjab. Our vegan version is a combination of potato, peas, green chillies and Indian spices, however the beauty of this dish is that you can combine any potato and vegetable combination that you like.

Aloo Tikki (Punjabi Potato Fritter) Ingredients

  • 3 medium white potatoes

  • 100g of green peas

  • 1 tbsp whole cumin seeds

  • 2 tsp salt

  • 2 fresh green chillies

  • 1 tsp ginger paste

  • Handful of fresh coriander

  • 100g of gram flour

  • Oil for frying

  • 2 pints of water (for boiling)

Cooking Method

1. Boil the potatoes with their skin on for 30mins or until cooked and soft

2. Alongside the potatoes boil the green peas in a separate pan for 20mins

3. Drain the water from the boiled potatoes

4. Peel the skin when they have cooled then start to mash the potatoes

5. Drain the peas and add to the mashed potatoes

5. To the mashed potatoes and peas add the gram flour, cumin seeds, salt, ginger, finely chopped green chillies and chopped coriander

6. Mix all the ingredients together in a mixing bowl

7. Divide the mixture and roll into golf ball size balls

8. Flatten each ball slightly with the palm of your hands to make the patties

9. Put the oil for frying into a pan on a high heat and deep-fry the patties until they are golden brown on both sides

10. Serve the Aloo Tikki's with a side salad of your choice and chutneys
